Popsicles are in high demand at my house. When the temperatures rise, the kids always want a cool treat when they come in from outside. I like that popsicles are portion controlled but most aren't very nutritious. So for the next few weeks, we will be making different kinds of popsicles and reviewing different popsicle molds each Friday.
Today, we are making Triple Berry Popsicles and there are only 3 ingredients! Coconut milk, frozen berries, and agave. We really liked the agave in these popsicles. It sweetened them up just enough and a little goes a long way with agave. You could substitute another sweetener though, honey would work well. The cheapest place I have found to buy coconut milk is at Winco. This can of SaVia Coconut milk was just .98. and this package of mixed berries from Winco was $1.98.
In a food processor or blender, dump frozen berries, coconut milk and agave (or honey) and blend until smooth. Fill your popsicle mold, insert sticks, and freeze. This recipe made enough for 10 of these large popsicles.
Ok, let's talk about this awesome popsicle mold! This Prepworks by Progressive Freezer Pop Maker is a bit more on the expensive side, around $22 currently on Amazon. However, I LOVE the look of these popsicles. They look so professional. The mold is easy to move from counter to freezer because all of the plastic molds “pop” into place. The popsicles came out very easily. Just a couple of second under warm water or in your hands and they came right out. Also, it was super easy to clean because you can “pop” the plastic molds out of the metal top and toss them in the dishwasher. We will definitely use this freezer pop maker again!
After filling each of the molds, you put the aluminum top on and insert regular popsicle sticks. (This mold came with 50 sticks.) The sticks stayed straight for us and didn't pop up but we were using a thicker, more smoothie like liquid.
And my kids loved them! The were slightly sweet and full of antioxidant rich berries and since they have coconut milk, they are dairy free.
- 12 oz package of frozen mixed berries
- 13.5 oz can of coconut milk
- 2 tablespoons agave or honey
- Dump all three ingredients into a blender or food processor.
- Blend until smooth.
- Pour into popsicle molds, insert sticks and put into the freezer for 4 hours.
- Remove from mold by running a little warm water over the plastic part of the mold.
