Graduation Cupcakes
Next week is graduation week at our house! We have two children moving onto new and bigger schools next year. They are great students and their good grades reflect their hard work.
To celebrate their accomplishments I wanted to make a special treat but with the hustle and bustle of the last few weeks of school, I knew it would need to be simple and quick. Then I remembered these cute graduation cap cupcakes that I made for a graduation party when my husband finished college. A quick trip to the store and 1 hour later, we were ready to party!
First, gather all of your supplies. You’ll need:
• devil’s food cake mix (plus ingredients called for on the box)
• chocolate frosting
• chocolate covered graham crackers
• AirHead Xtremes
• M&M’s (I picked out the school colors).
Bake cupcakes as per the instructions. Cool completely. Remove the cupcake from the paper. Cut the top off of the cupcake and discard (and by discard, I mean eat immediately).
Turn the cupcake upside down. Frost the bottom of the cupcake with chocolate frosting. You want enough frosting to make sure the graham crackers sticks well but not so much that the frosting oozes out.
Gently press the chocolate covered graham cracker onto the frosting. (I have looked at three different grocery stores and they each carry a different brand of these square, chocolate covered graham crackers.)
These fun Airhead Xtreme candies come in a strip of rainbow colors. With a sharp knife, I cut just the colors of strips that I wanted to use and put the rest away for another project.
I then cut each strip into 3 pieces – 1 longer, 2 shorter. The Airhead Xtreme candy is sticky enough that you can pinch the three pieces together and they will stick to each other just by the heat of your hands. You now have a tassel!
Spoon the frosting into a plastic zipper bag and cut off the corner (or use a frosting bag and tip). Squeeze a small circle of frosting onto the center of the cookie.
Attach the candy tassel to the frosting.
Last, attach an M&M to the top of the tassel with a little dot of frosting.
This treat is quick and easy but special enough to celebrate the accomplishments of any graduate in your life.
