I picked up this recipe at Fitness Together the other day while working out and wanted to share. It's a little late for the 4th of July, but tastes so good, it's a good one to have one to have handy for get together's or when you need to satisfy your sweet tooth. It's just too simple not to give a try and you might find it useful for your Pioneer Day celebration.
Blueberries are pretty easy to come by right now. I like to buy a bunch, then spread them out on a cookie sheet and freeze them for later. They are like frozen little candy treats that way. I actually prefer the frozen counterpart to fresh.
Blueberries are very low in calories, about 85 calories per cup. Plus, they are among the highest anti-oxidant value fruits.
For this recipe, you need:
*2 cups of blueberries
*2 Tablespoons fresh squeeze lemon juice
*1/2 cup water
*3 Tablespoons honey or agave nectar – Note that the berries do take on the honey flavor so plan accordingly. I used my raw Brazilian Pepper Honey from the Honey Stop. Delicious!
Put it all together in a blender and blend until smooth. Pour mixture into a container and seal. Place container in freezer. Every 30-45 minutes give the mixture a stir. After 2 hours go ahead and let it continue to freeze. If it gets too hard, just let it sit on the counter for a few minutes and fluff it with a fork or pastry cutter.
Top with vanilla yogurt and enjoy. I used strawberries to make a second mixture, following the same recipe above, and layed it to make a fun and patriotic dessert.
