One of my most treasured items is my old Betty Crocker cookbook. I received it as a wedding gift from a very wise woman, my Grandmother. Now, more than 30 years later, it's missing it's spine and proudly sports, spilled on and torn pages.
Between it's pages are many of our family's favorite meals. It's definitely the most worn cookbook in my library. I'm fairly certain, it's one of the few items I own, the kids may have to take turns sharing. I can't count the number of times I've turned it's pages to the Porcupine Meatballs, Au gratin Potatoes and even the time chart for cooking a turkey.
Betty Crocker Porcupine Meatballs Recipe:
- 1 lb Hamburger
- 1/2 uncooked rice
- 1/2 c. water
- 1/3 c. chopped onion
- 1 teaspoon salt
- 1/2 t. celery salt – substitute with any spice you like
- 1/8 t. pepper
- 1 can (15 oz tomato sauce)
- 1 c. water
- 2 t. Worcestershire sauce – I usually add more, around 2 Tablespoons
Mix hamburger, rice, 1/2 c. water, onion and seasonings. Shape into balls (about 12). These can be frozen at this point for a do ahead dinner.
When your ready to prepare, brown the meatballs on all sides in a skillet. Drain if necessary.
Mix remaining ingredients and pour over meatballs. Heat to boil, reduce heat and simmer for 45 minutes. Add water during cooking if needed (keep it saucy). Serve over my “Family Favorite Rice.” Top with grated Parmesan Cheese.

I made the cat cake for my daughter’s first birthday. Adorable!! Can’t believe that was 38 years ago?? Another great vintage cb is The I Hate To Cook Cookbook ?
