I'm thinking, those of you that picked up a Bountiful Basket today may want a recipe idea for Figs. I turned mine into a yummy dressing for salad, here's all it took.
- 1 cup chopped fresh figs, plus 2 fresh figs, quartered
- 3/8 cup sugar
- 3/8 cup cider vinegar
- 1 cupĀ Olive Oil + 1 Tablespoon
- Salt
- Freshly ground black pepper
In a saute pan, 1 Tablespoon Olive OilĀ with 1 cup of the figs and the sugar. Season the mixture with salt and pepper. Remove from the heat and pour into a food processor with a metal blade. Puree the mixture for 1 minute. Add the vinegar and process for 30 seconds. With the machine running, slowly add the OliveĀ Oil until the dressing is emulsified. Season the dressing with salt and pepper. Fold in the reserved figs. Pour the dressing into a saucepan and warm the dressing.
Sever over spinach or romaine lettuce and enjoy.
