Did you know that the average American family throws away $2200 worth of food every year? Wow! Today we want to share with you an idea to help you use up fresh foods like fruit, yogurt and greens like spinach and kale before they go bad. Smoothie Packets are a fantastic way to freeze food that would otherwise go into the trash and make a convenient, healthy breakfast all at the same time.
Fruit can go bad very quickly. But one of my favorite ways to use it before it goes bad is to just wash and cut it and stick it in the freezer on a tray. I usually leave it overnight and then when I see it the next day, I stick about one cup of mixed fruit into each baggie and put them back into the freezer.
I have frozen all kinds of berries, bananas, cantaloupe, pineapple, watermelon, mango, and honeydew.
Spinach is another one of those things that we don't seem to use up before it starts looking wilted. The best way I have found to use up spinach is to put it in the blender (I love my Ninja Professional blender with smoothie cups) with just a little bit of water and blend it nice and smooth. Then put it in an ice cube tray or I love this Wilton Easy Flex Square Pan and freeze. Pop these out and I like to put 2 in each Smoothie Packet. (This works for kale too.)
It seems I never use the whole carton of plain greek yogurt either. Freeze what is left before the expiration date in the same Wilton Easy Flex Pan and you'll have frozen greek yogurt cubes too. I like to put 2 of the frozen yogurt cubes in each smoothie packet.
Here is my finished Smoothie Packet! 1 cup frozen fruit, 2 cubes frozen spinach puree, and 2 cubes plain frozen greek yogurt.
Add smoothie packet to 1 cup of milk. Almond or coconut are great options but you could use regular milk or juice instead. Blend together in blender until smooth.
All of that food that would have ended up in the trash was saved and easily turned into a delicious, healthy and quick breakfast!
