Make it Monday Recipe: Easiest Way to Make Stuffed Peppers
This “go to” recipe has been a family favorite for many years. If you like stuffed peppers but don't want to go to all the baking trouble, this recipe will help you out. It's quick and easy and has all the same flavors as the oven baked.
Ingredients:
- 3 cups Family Favorite Rice Mixture
- 3/4 pound ground beef
- 1/4 of a chopped onion (about 1/2 cup)
- 1 stalk of celery (about 1/2 cup)
- 1 (8) oz can stewed tomatoes (un-drained)
- 1 Tablespoon Italian Seasoning
- 1 cup shredded cheese (choose any you like)
- Salt & Pepper to taste (about 1/2 t. salt, 1/4 t. pepper)
- 2-3 Peppers cut in half or thirds (Green, Red or Yellow, whatever you like)
- Fresh Basil
Brown hamburger with onion, celery, salt & pepper. Drain off fat if necessary.
Mix in rice, tomatoes, seasonings and cheese. Today, I used a Pizza mix cheese (Mozzarella, Provolone, Parmesan & Romano) because that's what I had on hand. This recipe is delicious with cheddar blends as well.
At this point, you can stop and bag it up for the freezer. I often double the recipe and save one for later.
Put mixture in a microwave safe casserole. Yep, microwave! Top with peppers. Cover and microwave on high for 15 – 20 minutes. Until peppers are tender. To serve, spoon mixture over peppers. Top with additional cheese and fresh basil if desired.
