These Autumn inspired cookies are something my family looks forward to this time of year. We call them Jack-O-Lantern Pumpkin Cookies as I often made them on Halloween night with leftover yes… Jack-O-Lantern pumpkin.
Ingredients:
1 cup Sugar
1 cup Pumpkin Puree (recipe here)
1/4 cup shortening
1/4 cup natural applesauce (no sugar)
1 tablespoons grated orange peel (one orange)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Glaze
2 tablespoons butter
1 cup powdered sugar
1/2 teaspoon vanilla
about 1 tablespoon milk
Heat butter until soft brown. Stir in powdered sugar and vanilla. Remove from heat and stir in milk until smooth.
Heat oven to 375. Mix sugar pumpkin, shortening, applesauce and orange peel. Sift in flour, baking powder, baking soda, cinnamon, nutmeg and salt and combine.
Drop dough by rounded teaspoons on ungreased cookie sheet. Bake until light brown (8 to 10 minutes). Don't over bake, these are soft cake like cookies. Cool and drizzle with glaze. Makes 2 dozen.
If you enjoy chocolate chips or nuts in your cookies this recipe stands up to both ingredients very well. You can add 1/2 cup of either one to change it up.
