Time for another “Snack of the Day” post. Over the next few weeks, we are going to be sharing some healthy, simple and easy Smoothies and Snacks that come in under or around 100 to 200 calories. Hopefully, you’ll find them helpful and they will give you some motivation to replace one of your snacks attacks with something better for you. Before you break out the last of the last of the broken chips to go with your leftover salsa from Memorial Day, try making your own sweet potato oven chips. They are pretty quick and I think they taste much better.
First off peel and slice a Sweet Potato. You'll want the slices to be as even as possible. The thinner they are, the crispier the chips will turn out. I use a Salad Shooter, I've owned for years. Your food processor or even a gool ‘ole knife will work fine. Just try to make the slices as uniform as possible.
Lay your slices out on a cookie rack set on top of a baking sheet, spray lightly with some Olive Oil Cooking Spray and season to taste. I like to use Kirklands Tillicherry Pepper with Lemon I found at Costco but, whatever you like works. Go easy on the salt though.
Bake at 400 degrees for 25-40 minutes. Watch them, they go from done to burnt pretty fast. Baking time depends on the thickness of your slices. Serve with your favorite Salsa and enjoy.
Salsa is great on baked Sweet Potatoes too and only has around 10 to 20 calories in a quarter of a cup. If you want some added protein try topping with kidney beans. It's one of my favorites.
