I made up this casserole one night when I was in the mood for Chicken Cordon Bleu but didn't have the time to make it properly. Chicken Cordon Bleu Casserole is quick and easy, comfort food that my family, even the pickiest eaters, loved!
You start by mixing bite-sized, cooked chicken breast with ham pieces, cream of chicken soup and seasonings. Spray a 4 qt casserole dish (or 9×13) with cooking spray and put the chicken mixture into the pan.
Next, layer 6-7 pieces of sliced swiss cheese over the top of the chicken mixture.
Last, put 1 1/2 sleeves of Ritz crackers into a large zip-top storage bag. Crush by pounding with hands or rolling pin. Add melted butter to bag and shake cracker crumbs around until they have absorbed all of the butter.
Cook for 25-30 minutes at 350 degrees or until bubbly around the edges.
The cracker crumbs were crispy but melted in your mouth. Then the melted swiss cheese over the warm chicken and ham layer. Mmmm! It tasted just like the real thing. Even m pickiest eater came back for more!
- 6 boiled chicken breasts, cut into bite size pieces
- 12 oz of lunchmeat ham, cut into small pieces
- 2 cans condensed cream of chicken soup (do not dilute)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 tbsp dried parsley
- 6-7 slices of swiss cheese
- 1.5 sleeves of Ritz crackers
- 1/3 cup butter, melted

- Spread crumbs over the cheese layer.
- Cook for 25-30 minutes on 350 degrees or until bubbly around the edges and cracker topping is slightly browned.
- Serve
- I used lunchmeat ham because I usually have it on hand. I like the Land O Frost brand but you could use left over ham that has been diced or the packaged diced ham in the meat section.
