I try to keep Rice Krispies and marshmallows in my pantry all of the time because they are a great go-to treat if friends come over or I have to take a last minute treat somewhere. I found that sometimes I need a double batch for big family parties or Cub Scout Pack Meetings. So I played with different amounts of butter, marshmallows and Rice Krispies and found what I think to be the perfect ratio of marshmallow to Rice Krispies! My BIG Batch Rice Krispies Treats are made to fit on a large cookie sheet (half sheet pan size) and make approximately 36 good-size Rice Krispies Treats.
My BIG Batch Rice Krispies Treats only have 3 ingredients – 10 cups Rice Krispies, 2-10 oz bags of mini marshmallows and 3/4 cup butter (1.5 sticks). Next, spray an 18 x 13 cookie sheet and set it to the side. I absolutely LOVE my large, half sheet size cookie sheets! I use them for everything…cookies, rolls, baking chicken, roasting veggies, sheet cakes and more! I highly recommend investing in several of these.
Measure out 10 cups of Rice Krispies into a very large bowl and set aside. In a large pot, melt the butter. When butter is melted, add the marshmallows and stir until they are almost all melted. Immediately, pour the marshmallow mixture over the Rice Krispies and stir until well combined. (I think it's important to not overcook the marshmallows which I why I stop before they are fully melted. The more you cook the sugar in the marshmallows the harder the Rice Krispies Treats will be.)
Pour the mixture into the buttered cookie sheet you prepared earlier. I like to smooth out the mixture with the back of a spoon that has been sprayed with butter spray. This way it doesn't stick to your spoon! I cut mine into 36 bars.
Tips: Do NOT put these in the fridge. The butter and the sugar will become rock hard. Also, I find a plastic knife is the perfect thing to cut Rice Krispies Treats with because the marshmallow doesn't stick to the plastic knife.
Rice Krispies Treats are a classic! Perfect for picnics, potlucks, afterschool treats, family functions and church gatherings. For a fun twist, put some sprinkles on top before they set up.
