Growing up we had 2 peach trees in our backyard and every summer we would bottle tons of peaches at the end of the summer. One of the things I remember the most is how hot it was in the kitchen when we canned peaches. What I would have given to have a dish of this easy, 4 ingredient, Peaches and Cream Ice Cream!
I have just one peach tree in my own backyard but I know that each year toward the end of August and beginning of September, I am going to have more peaches than I know what to do with. We eat as many as we can (love fresh peaches for breakfast) and I try to give about half away to neighbors and family. Then I freeze quite a few of the peaches for smoothies and with what is left I love to try new peach recipes.
This year I knew I wanted to experiment with “no churn” ice cream. That's right, no ice cream maker necessary and it only has 4 ingredients!
Peaches and Cream Ice Cream
6-8 peaches, pureed
1 quart whipping cream
1 – 14 oz sweetened condensed milk
1 tablespoon vanilla
Using a hand mixer or stand mixer, whip the cream and vanilla until stiff peaks form or approximately 3 minutes. Pour sweetened condensed milk into whipped cream and gently fold together until mixed.
Peal and cut fresh peaches into slices. Puree peaches using a blender, food processor or immersion blender. Pour pureed peaches into whipped cream mixture and fold together.
Pour ice cream mixture into a plastic container with a tight fitting lid and freeze for 6-8 hours. Scoop and Enjoy!
